Look at the online help option in the help menu within Audacity.

By using the Envelope tool, it is possible to change the volume throughout a track. Choose the Envelope Tool in the top left palate.

 

To create an edit point, click a spot within the waveform. Dragging the mouse allows you to control the relative volume, so that an even contour is possible by continually adding new edit points. The below diagram exemplifies how a fade in/fade out can be created in connetion with labels, which can be useful in avoiding clicks when exporting each label as a separate sound file (see tutorial Labeling tracks and splitting an audio file into mulitple files in Audacity).
